Infatti, fino a non molti anni fa, il coniglio, a Ischia, veniva allevato in profonde buche dove i contadini riponevano i residui di potatura dei vitigni, le bucce delle leguminose (soprattutto fave) e le graminacee che crescevano nei campi.<\/p>\n<p><strong>Oggi i &#8220;<em>fossi<\/em>&#8221; o le &#8220;<em>fosse<\/em>&#8221; &#8211; a Ischia ci si divide anche su questo &#8211;<\/strong> non ci sono quasi pi\u00f9, sostituite, salvo qualche lodevole eccezione, dalle pi\u00f9 pratiche gabbie, e per\u00f2 un buon compromesso, soprattutto se l&#8217;allevamento \u00e8 destinato all&#8217;autoconsumo, \u00e8 quello di continuare a nutrire l&#8217;animale alla &#8220;<em>vecchia<\/em>&#8221; maniera, invece che con i mangimi industriali.<\/p>\n<p><strong>Idem per il resto<\/strong>: vino, spezie, pomodori tutto deve essere di &#8220;<em>casa<\/em>&#8221; o, meglio ancora, di qualit\u00e0 e dalla filiera certa.<\/p>\n<p><strong>Veniamo alla ricetta<\/strong>:<br
